Behman Safed, also known as White Behen, comes from the roots of the Centaurea behen plant. This hardy herb grows up to a meter tall and features large, broad green leaves near the base and delicate yellow flowers on slender stems. Its roots are thick, with a brown skin and a white interior, often appearing shriveled and woody when dried.Traditionally, these roots are sliced and softened for use in classic mixtures and are easily recognized by their tough texture and pale, natural tone.
